Chicken and Broccoli Pasta

This is a classic lazy pig kinda meal. Something that comes together quickly and easily, but is still tasty!

Chicken and Broccoli Pasta

This is also really good with egg noodles rather then linguine. You can really use any kind of noodle that you’d like. Using a rice noodle or even a low carb noodle is a way to modify the meal to fit into dietary needs.

Ingredients

  1. 8 oz linguine
  2. 1 cup fresh or frozen broccoli
  3. 2 tbs unsalted butter
  4. 1 lb boneless, skinless chicken thigh
  5. 1 can (10.45 oz) sodium free cream of mushroom soup
  6. 1/2 cup Parmesan cheese (fresh if possible)
  7. 1/4 tsp white pepper
  8. 1/2 cup sour cream
  9. 1 cup chopped mushrooms
  10. 1 tsp fresh garlic
  11. 1 medium white onion

Directions


Cook noodles per package instructions, drain and set aside. Cook broccoli until tender and chop into bite sized pieces. If using fresh broccoli, I recommend steaming it. If using frozen broccoli, warm up per package instructions. Then set broccoli aside. In a large pan: cook the garlic and onion in the butter on high until tender. Reduce heat to medium. Add in the chicken and cook through. Add in the linguine, broccoli, soup, cheese, pepper and mushrooms. Stir and heat mixture through. Remove from heat and stir in the sour cream.
